Healthier Thanksgiving Sides Inspired by CUT

One of the biggest food holidays is right around the corner, and fans of CUT Energy know the importance of heading into the festivities with a well-planned strategy. That includes preparing dishes that you know are going to coincide with your clean eating plans. So, this year instead of the classic comfort sides, we’ve provided some options that will align with your goals. And because they’re inspired by the flavors of CUT Energy, you know they taste amazing too.

Along with healthier food options, there are a few more strategies to put in place.  Drink plenty of water, avoid alcohol and be mindful of portions. But if Thanksgiving is the day you want to throw all your food rules out the window and simply enjoy, just know you can always start fresh the next day. Until then there’s elastic waistbands.

Orange Beets Salad

The fresh citrus taste combined with the power of beets is such a delicious and nutritious side dish, it just may replace turkey as the star of the show.

Inspired by: Orange Mango Pineapple

Orange Beets Salad

What you’ll need:

  • 24 baby orange beets
  • 2 tbsp pine nuts
  • ¼ cup plus 1 tsp vegetable oil
  • 8 tangerines
  • 1 medium red onion, sliced
  • 3 tablespoons apple cider vinegar
  • 5 thyme sprigs
  • salt

How to make it:

  1. Preheat oven to 375. Place the beets in a roasting pan, cover with foil and bake for 1 hour. Let them cool and then peel and quarter.
  2. In a shallow baking dish, toss the pine nuts with 1 tsp of the vegetable oil and toast in the oven for 3 minutes.
  3. Using a knife, peel the tangerines and slice between the membranes to release into sections. Squeeze the juice from the membranes into a small bowl.
  4. In another small bowl, toss the onion and apple cider vinegar with a pinch of salt and set aside for 5 minutes. Stir in the tangerine juice and the ¼ cup vegetable oil. Add a pinch of salt.
  5. Arrange the beets and tangerines on a platter and drizzle with dressing. Sprinkle pine nuts and garnish with thyme.

Brussels Sprouts With Bacon & Pomegranate

For anyone who turned their noses up at Brussels sprouts as a child, here’s your chance to redeem yourself. With the addition of bacon and pomegranate, it was worth the wait.

Inspired by: Watermelon Pomegranate

Brussels Sprouts With Bacon & Pomegranate

What you’ll need:

  • 1 ½ lbs. Brussels Sprouts
  • 3 tbsp extra virgin olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 6 slices bacon
  • ¾ cup pomegranate arils (from 1 pomegranate)

How to make it:

  1. Preheat oven to 400 degrees. Cut ends from Brussels Sprouts and remove outer leaves. Slice in half if preferred. Mix them in a bowl with olive oil, salt and pepper.
  2. Spread out on a cookie sheet and roast for 35 to 40 minutes, (should be crisp on the outside and tender on the inside). Every few minutes give the pan a shake. While sprouts are roasting, cook the bacon in a frying pan until crispy and cut into pieces. Put sprouts in a bowl and sprinkle with bacon, pomegranate and salt to taste. Serve warm.

Lemon Garlic Smashed Potatoes

Inspired by: Berry Lemonade

Skip traditional mashed potatoes and go for this smashed lemony version instead. With the absence of cream and butter, it’s a better-for-you option and a lot more fun to make.

Lemon Garlic Smashed Potatoes

What you’ll need:

  • 6 medium Yukon Gold potatoes
  • 2 tablespoons olive oil
  • Juice from half a lemon
  • 4 garlic cloves crushed
  • 2 tsp oregano, divided
  • Salt and pepper to taste
  • Olive oil spray

How to make it:

  1. Preheat oven to 400 degrees
  2. Place potatoes in a large pot of salted water, bring to a boil and cook covered for 30 minutes.
  3. Spray a large cookie sheet with cooking oil spray. Arrange potatoes on the sheet and using a potato masher lightly flatten the potato (make sure they stay in one piece). Mix together olive oil, lemon juice and garlic and pour over each potato. Sprinkle with 1 tsp oregano, salt and pepper. Broil for 15 minutes, remove from oven and sprinkle again with 1 tsp. oregano.

HIIT Workouts You Can Do At Home

You’ve likely heard the term HIIT floating around in certain fit circles. It’s an abbreviation for High Intensity Interval training and it works like this: alternating between periods of hard effort with lighter recovery. Simply put this means you’re executing short bursts of exercise followed by rest, hitting the full body at a fast pace. Pair this with weights-free exercises and it’s the ideal workout scenario when time is not on your side (or you just don’t feel like going to the gym).

HIIT is also the perfect way to add some life back into a stale workout regimen. If you’ve become bored or feel like your results have plateaued, this style of training can be more effective (not to mention more practical) than traditional weigh and cardio routines.

When it comes to HIIT training there is a variety of exercises to choose from, and no equipment or gym required. If all you have is 15 minutes in the morning before you start your day, perfect! Something to keep in mind though, because you are moving at a faster pace, there’s no time to correct form set by set, so proper form from the start is essential.

New to HIIT? Here are two ways to introduce the technique into your regimen. A 15-minute option to power through, or 30 minute routine when you have the luxury of a little more time.

The Routines:

 15 Minute Routine

-Do each exercise below once for 1 minute, followed by 10 seconds of rest.    

30 Minute Routine

Select 6 exercises from the list below. Do each move for 45 seconds, rest for 15 seconds. After each circuit rest for 1 minute. Complete 4 sets. 

The Exercises

Walkout

Fold your body forward, reaching for the floor. Walk your hands out until you’re in a plank position. Walk them back in and stand up.

Butt Kicks

Start standing with feet under hips and hands at sides. Bend left leg and raise heel to glute, then quickly return it to start and repeat on the right side. 

Burpees

Start standing then jump down into a plank and then quickly lower yourself to the ground. Push yourself up from the floor, jump your feet towards your hands as you stand up, and finish the move with another standing jump at the top.

Mountain Climber

Get into a plank position, making sure to distribute your weight evenly between your hands and your toes. Drive your right knee toward your left elbow. Then switch legs, pulling one knee out and bringing your other knee in. Keep your hips down and run your knees in and out as far and as fast as you can.

Jumping Jacks

To start, stand in center of mat with feet together and arms at sides. Then, simultaneously raise arms out and overhead while jumping feet out past shoulders. Without pausing, quickly reverse the movement.

Jump Squat

Stand with your feet shoulder-width apart. Sit your hips back and down to about knee height. Driving through your heels, stand back up to your starting position.

Squat Punches

Stand with your feet shoulder-width apart. Squat down, pushing your hips back, and start punching forward with your right hand, then left hand.

Star Jump

Start standing with feet together and arms at sides. Bend knees to crouch down, bringing fingers to hover above toes. Then jump up into air bringing legs straight and wide outside of shoulders and arms out overhead, forming “X” with your body. Softly land back into a crouch.

Jump lunge

Start in a lunge with right leg forward and left back, both bent at 90 degrees, right arm straight at side, and left arm bent, hand in line with chin. Jump up quickly off floor, switching legs in midair to land in lunge with left foot forward. 

Plank

Place your hands directly under your shoulders (slightly wider than shoulder-width) as if you’re about to do a push-up. Ground your toes into the floor and squeeze your glutes to stabilize your body. Neutralize your neck and spine by looking at a spot on the floor about a foot beyond your hands.

Push ups

Start in a plank position with your hands almost shoulder-width apart. Bend your elbows to 90 degrees, bringing your chest closer to the floor, then push yourself back up to your starting position.

Wall Sit

Lean back against a wall with your torso. Press back and slide down the wall until your thighs are parallel with the ground, making a 90-degree angle. Keep your head, shoulders, and upper back against the wall and hold the position.

So, you’ve already sent out spooky invitations, decorated your home with scarecrows, cobwebs, and jack-o’-lanterns, and created the ultimate dance party playlist for the Halloween shindig that you’ll be hosting this year, but what non-alcoholic drinks will you be serving? If you haven’t really thought that much about the drink situation and what you’ll be serving all of the goblins, ghosts, and ghouls who will be coming over, don’t worry because we’ve got you covered with 13 Spooky Mocktails that your guests will absolutely love.

Why 13? Well, the number 13 is synonymous with bad luck. More than 80 percent of high-rise buildings in the United States don’t have a 13th floor, lots of people avoid getting married or buying a house on the 13th, and it’s considered unlucky to have 13 guests at a dinner party. So, for all of you hosting Halloween parties this year, only serve these 13 spooky mocktails at your Halloween bash if you’re truly willing to tempt fate…

1. Smoking Halloween Mocktails

Halloween is all about illusions. So, you might as well play into that and make these Smoking Halloween Mocktails courtesy of This Vivacious Life in order to create an eerie effect that all of your guests will most definitely drink up.

Ingredients & Supplies:

  • 2 cups of apple cider
  • 2 cups of orange juice
  • ½ teaspoon of orange zest
  • 1 cup of pumpkin puree
  • 2 tablespoons of simple syrup
  • 2 tablespoons of mulling spices in a cheesecloth (or tea strainer)
  • Dry ice

Instructions:

  • Whisk together the apple cider, orange juice, orange zest, and pureed pumpkin in a pan on the stove over medium to low heat.
  • Add some simple syrup and mulling spices in a cheesecloth (or a tea strainer) to the punch and continue cooking.
  • Heat thoroughly and remove the spices.
  • Whisk the punch really well and serve warm.
  • Add a tiny amount of dry ice (like the size of a large pea) to create an eerie effect that everyone will love!

2. Creepy Shirley Temple Drink Recipe

If you ask almost anyone what their favorite childhood drink was, we can almost guarantee that they’ll say a Shirley Temple. That’s why we know that this Creepy Shirley Temple Drink Recipe from Boulder Locavore will definitely spook your guests, and also keep them coming back for more…

Ingredients & Supplies:

  • 8 ounces of ginger ale, lemon-lime soda, or a 50/50 mix of both
  • ½ an ounce to ¾ of an ounce of grenadine
  • 1 to 2 cherries
  • 1 beaker for a glass
  • Syringes

Instructions:

  • Fill a beaker (or glass) with either ginger ale, lemon-lime soda, or a 50/50 mix of both.
  • Fill a shot syringe with ½ an ounce to ¾ of an ounce of grenadine.
  • Add the cherries to the beaker (or glass).
  • Place the syringe in the beaker (or glass) for your guests to ‘inject’ the grenadine into the Creepy Shirley Temple.

3. Eyeball Snot-Tail

It wouldn’t be Halloween if you didn’t gross someone out a little bit, right? So, to accomplish that goal, try this Eyeball Snot-Tail by Chelsie Collins.

Ingredients & Supplies:

  • 135 gram pack of lime jelly
  • 700 milliliters of apple and pear juice
  • 300 milliliters of lemonade
  • 425 gram can of lychees in syrup
  • 10 to 15 cocktail cherries from a jar
  • 10 to 15 raisins
  • 10 to 15 cocktail sticks

Instructions:

  • Step One: Make the jelly following the instructions on the pack. Then chill until set. Combine the apple and pear juice with the lemonade in a large jug and chill in the fridge.
  • Step Two: To make the eyeballs, drain the lychees and poke a hole in each cherry with one of the cocktail sticks. Put the cherry inside the lychee, then push the raisin into the cherry. Press the eyeball onto the end of the cocktail stick and set aside until serving.
  • Step Three: When the jelly has set, use a whisk to break it up into small chunks. Spoon into the cocktail glasses and top up with the apple juice mixture. Put an eyeball into each glass before serving.
  • Step Four: Use any leftover jelly to make snot shots by putting the ‘slime’ into plastic shot cups.

4. Magic Potion Punch

All of you mad scientists out there will love this Magic Potion Punch from Bitz & Giggles that fizzes and bubbles when you add the special ingredient!

Ingredients & Supplies:

  • 1/8 cup of lemonade
  • 1/8 cup of grape juice
  • ¾ cup of lemon-lime soda
  • 1 teaspoon of instant grape gelatin mix in a powder form

Instructions:

  • Add 1/8 cup of lemonade and 1/8 cup of grape juice to an 8 ounce cup.
  • Combine ¾ cup of lemon-lime soda to the lemonade and grape juice.
  • Add the teaspoon of instant grape gelatin mix and watch the magic happen. (If your drink doesn’t fizz, you just need to add more lemon-lime soda!)

5. Black Spider Party Punch For Halloween

Finding Zest gets creative with this Black Spider Party Punch For Halloween mocktail that is really just a simple punch that uses a few fun party supplies to draw guests in.

Ingredients & Supplies:

  • 3 cups of fruit punch
  • 3 cups of grape juice
  • 1 12-ounce can of unsweetened sparkling water (flavored or unflavored)
  • ¼ cup of frozen blueberries
  • Black spider stickers to decorate your pitcher
  • Black spider cups

Instructions:

  • In the pitcher covered with black spider stickers, stir the fruit punch and grape juice together.
  • Gently stir in the sparkling water.
  • Top with blueberries.
  • Serve the punch cold in the black spider cups.

6. Halloween Monster Guts Punch

Ingredients & Supplies:

  • ½ gallon of raspberry sherbet (slightly softened)
  • 2 liter bottle of lemon-lime soda
  • 64 ounces of fruit punch

Instructions:

  • In a large punch bowl, combine the sherbet and fruit punch. Before serving, add the lemon-lime soda and gently stir to mix all of the ingredients together.
  • For individual portions, put a small scoop of raspberry sherbet in the bottom of each glass. Then fill half of the glass with fruit punch and top the mixture off with the lemon-lime soda.
  • Feel free to adjust the mixture depending upon your taste preference. You can add more or less fruit punch, sherbet, or lemon-lime soda to make the perfect Halloween-themed mocktail.

7. Melting Monster Halloween Punch

Made with three simple ingredients, this Melting Monster Halloween Punch recipe from The Speckled Palate is a great beverage for any Halloween gathering. 

Ingredients & Supplies:

  • 4 ounces of lemonade
  • 4 ounces of lemon-lime soda
  • 1 small scoop of lime sherbet
  • Candy eyeballs (for garnish)

Instructions:

  • Pour all of the lemonade and 2 ounces of the lemon-lime soda into a glass.
  • Then scoop the lime sherbet into the glass.
  • Decorate the sherbet with candy eyeballs.
  • When the monster sherbet has been decorated, pour in the rest of the lemon-lime soda.

Ingredients & Supplies:

  • 2 cups of pomegranate juice
  • 20 pitted black cherries
  • 2 tablespoons of agave syrup
  • 5 drops black gel food coloring (optional, but you’ll lose the black color without it)
  • Lime seltzer
  • Ice

Instructions:

  • Add the pomegranate juice, cherries, agave, and food coloring to a blender.
  • Puree until very smooth.
  • Strain the juice into a large pitcher and discard any pulp.
  • Pour the juice into glasses filled with ice and top with seltzer.

9. Spooky Halloween Mocktail Recipe

Since Halloween falls on a Sunday this year, you might prefer to host a Halloween brunch. If that’s what you end up doing, make sure to include this Spooky Halloween Mocktail Recipe from 3 Boys and a Dog that features orange juice as one of the key ingredients.

Ingredients & Supplies:

  • 2 cups of orange juice
  • 1 cup of tonic water
  • Juice of 1 lemon
  • ¼ cup of honey
  • 1 tablespoon of black nonpareils (crushed)
  • 2 drops of red and 5 drops of yellow food coloring (optional)

Instructions:

  • In a medium saucepan, bring the orange juice, lemon juice, and honey to a boil.

  • While the mixture is simmering, crush the nonpareils and spread them out onto a small plate.

Who says that Halloween can’t be healthy? So, this is another excellent drink option for those of you hosting a Halloween brunch this year.

Ingredients & Supplies:

  • A large handful of spinach
  • A large handful of kale
  • 1 large banana
  • 1 to 2 tablespoons of maple syrup
  • 150 milliliters of oat milk (plus a little extra)
  • 3 tablespoons of rolled oats
  • 1 tablespoon of flax seeds
  • Ice (to serve)

Instructions:

  • Put all of the ingredients (except the ice) into a blender.
  • Blend until smooth, adding a little extra oat milk if it’s too thick to drink.
  • Pour the ghoulish green goo into two glasses with ice and drinks right away.

11. Zombie Juice

Ingredients & Supplies:

  • 2 parts lemon-lime soda
  • 1 part water
  • 1 part green apple syrup
  • A splash of cranberry juice

Instructions:

  • Fill a glass half full with ice cubes.
  • Add the liquid ingredients, in order, pouring each slowly to create a layered effect.
  • Finish off with one of the edible stir sticks.

12. Hocus Pocus Punch

Ingredients & Supplies:

  • 6 cups of apple cider
  • 2 cups of cranberry juice
  • 2, 12-ounce cans of orange seltzer
  • ¼ cup of cherry juice
  • 2 oranges (sliced)
  • 2 apples (sliced)
  • 1/3 cup of cherries
  • 1 cup of ginger ale

Instructions:

  • Combine the apple cider, juice, orange seltzer, ginger ale, and cherry juice in a pitcher or a large bowl.
  • Add the cherries, orange slices, and apple slices.
  • Stir and serve!

13. Witches Brew Halloween Mocktail

Ingredients & Supplies:

  • Green colored fruit juice (with a lower sugar content than the grape soda)
  • Grape soda (with a higher sugar content than the green juice)
  • A clear cup or glass
  • Ice cubes
  • A spoon

Instructions:

  • Start by filling your glass completely to the top with ice cubes.
  • Pour the grape soda over the ice, filling the glass half full. Once the soda has stopped fizzing, very slowly pour the green colored fruit juice over the grape soda until the glass if full.
  • If the green colored fruit juice begins pouring too quickly, it will mix into the grape soda. A trick to help pour slowly is to hold a spoon with the backside facing up across the glass and then pour the green colored fruit juice over the backside of the spoon. This way it will slowly trickle into the glass and keep it from mixing with the grape soda.

Halloween Party Pro Tip: Set out some Halloween stickers, googly eyes, and other crafty items near the glasses at your spooky mocktail station. This way your guests will be able to differentiate their drinks and know who’s glass is who when they put their spooky Halloween mocktails down.

Watermelon, Squash & Pomegranate Salad

When you think of the refreshing combination of watermelon and pomegranate, naturally you think of summertime. Which is exactly why our CUT Energy Watermelon Pomegranate is such a delight for the tastebuds. But here’s a way to take that flavor combination to the next level and incorporate into your healthy meal plan. Add a few extras like spinach, squash and pepitas, and you’ve got a nutritional powerhouse!

What you’ll need:

  • 1kg Seedless Watermelon
  • 100g crumbly feta cheese
  • Seeds from 1/2 a pomegranate
  • 8 cups baby spinach
  • 2 small summer squash chopped
  • 1/2 cup pepitas
  • 12 fresh mint leaves, coarsely chopped
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • Salt and pepper to taste

How to make it:

In a large bowl combine the first 7 ingredients. Add lemon, olive oil and salt and pepper and toss gently to combine

TikTok Deep Dive: 5 Food Trends You Should Try Right Now

The social networking service TikTok prides itself on setting trends. You probably remember seeing, or maybe even participated in, the #TikTokDanceChallenge when all of us were stuck at home during the beginning of the pandemic. It turns out that TikTok is also the place to be if you’re someone who likes to stay up to date on all of the latest and greatest food trends. 

While not every recipe on the social media app is a huge hit or even safe to make at home (Yes, we’re talking about you #ToasterGrilledCheese), we did a deep dive to track down all of the TikTok Food Trends that you should try right now. After you try these recipes, let us know which #TikTokFoodTrend is your favorite.  

#ProteinCoffee (Or ‘Proffee’)

Americans are drinking more coffee than ever. So, for those of you who need that cup of Joe in the morning to get your day going, and also need protein in the morning for your workout, you might want to try #proteincoffee or ‘proffee,’ which is a TikTok trend that involves mixing protein and coffee. 

Protein coffee made the Top 10 TikTok Food Trends list with 3.3 million Google search results and almost 19 million views. 

To make iced protein coffee or proffee, all you need to do is fill a glass halfway with ice, add eight ounces of coffee, and all (or part of) your favorite protein shake. Then you can play around with the coffee to protein shake ratio until you get it just right. #PestoEggs

TikTok user @amywilichowski or “pesto egg girl” as she writes in her bio, set off a craze when she shared her #pestoeggs recipe. Her breakfast recipe video, which she originally posted on April 26, 2021, now has almost 12 million views. 

She says that all you need to do to make #pestoeggs is use pesto instead of the normal cooking oil that you use to make your eggs in the morning. Then you can make your eggs scrambled, sunny-side up, or however you’d like. The trick here is that the oil in the pesto will keep your eggs from sticking to the pan. Wilichowski recommends eating your #pestoeggs on a piece of toast with ricotta, smashed avocado, honey, salt, pepper, and red pepper flakes.

If you’re looking for a side dish to go with your #pestoeggs, actress, social media personality, and vegan cook @iamtabithabrown has the perfect #veganbacon recipe for you (even if you’re not vegan).  She first got everyone on TikTok excited when she posted a video of #carrotbacon, which is now on the Top 10 TikTok Food Trends list with 565,000 Google searches and 8.2 million views. This is pretty cool since carrot bacon is a great way for people to add more veggies to their diet. Here are the ingredients and instructions for Tabitha Brown’s Carrot Bacon recipe. 

Ingredients: 

  • 1 to 2 full-sized carrots, sliced using a vegetable peeler
  • 2 tablespoons of liquid smoke
  • 2 tablespoons of maple syrup
  • ½ teaspoon of garlic powder
  • ½ teaspoon of onion powder
  • ¼ teaspoon of smoked paprika
  • ¼ teaspoon of black pepper

Instructions: 

  • Peel the carrots, trying to get a fairly thin slice.
  • Mix all of the ingredients for the marinade.
  • Soak the carrot slices in the marinade for two minutes. 
  • Preheat your air fryer to 380 degrees Fahrenheit. 
  • Place the carrot strips on your air fryer tray. 
  • Then place the tray on the top shelf of your air fryer. 
  • Air fry for five minutes, or until you get a nice crispy finish.

Finnish food blogger Jenni Häyrinen created “Uunifetapasta” in 2019, which is the Finnish word for oven-baked feta pasta. Häyrinen’s recipe turned into a viral hit in Finland, with feta cheese sales going up 300% in Finland at the time and stores running out of the ingredients to make her baked feta pasta recipe. 

If you’re wondering why Baked Feta Pasta is part of this viral food trends article, that’s because American blogger and chef @grilledcheesesocial translated the recipe into English and shared it on Instagram, where it went viral once again. Soon after, @feelgoodfoodie shared the recipe on TikTok and soon baked feta pasta became the new pasta, enjoying a third viral wave. “Feta Pasta” has been searched over 825,000 times on Google and viewed almost 950 million times, making it the #1 Ranked TikTok Food Trend. 

Since we want to give credit to the actual creator of the baked feta pasta recipe, here’s the original #uunifetapasta recipe courtesy of Jenni Häyrinen at Liemessä. This recipe yields four servings. 

Ingredients: 

  • 1 pound of wheat pasta
  • 1 block (200 grams) of Greek feta cheese
  • ½ cup of olive oil
  • ½ cup of red chili pepper
  • Cherry tomatoes (500 grams)
  • 4 garlic cloves (Optional)
  • Black pepper
  • Salt
  • Bunch of fresh basil leaves 

Instructions: 

  • Preheat your oven to 400 degrees Fahrenheit. 
  • Pour some olive oil on the bottom of your baking dish. Then place the whole feta block on top. 
  • Chop the red chili pepper and add on top of the feta cheese. Then pour more olive oil on top.
  • Place the cherry tomatoes on the sides of your baking dish and roll around in oil. Grind some pepper and season with a pinch of salt. 
  • Bake at 400 degrees Fahrenheit for 15 minutes in the middle rack of your oven. 
  • Increase the heat to 440 degrees Fahrenheit and move your baking dish to the upper rack. Use the grilling mode for another 10 minutes. (Note: This might cause your fire alarm to go off as Jenni Häyrinen says that this causes her fire alarm to go off every single time.)
  • Cook your whole wheat pasta al dente according to the cooking instructions. 
  • Break the feta apart a bit and mix with the tomatoes. Then mix the sauce with the pasta and add plenty of basil leaves. 
  • Bonus Tip: Garlic also goes well with baked feta. So, if you’d like to add garlic, cut four garlic cloves in half lengthwise, toss them in the same time as you do the tomatoes, and roll the garlic in the olive oil.

#CornRibs or “vegan ribs” became a viral sensation on TikTok after @spicednice posted a video of corn ribs and said, “Oh my goodness, these corn ribs need to be the next trending food! They’re so fun!” Apparently on TikTok, ask and you shall create the next #TikTokFoodTrend.  

While corn ribs don’t taste anything like barbecue ribs (in case you were wondering), this recipe courtesy of @spiced.nice’s Instagram account offers a fun and delicious way to enjoy corn while it’s still in season. 

Ingredients:

  • 3 ears of corn (makes 12 corn ribs)
  • 4 tablespoons of olive oil
  • 1 teaspoon of lemon pepper
  • ½ teaspoon of garlic powder
  • ¼ teaspoon of chili powder
  • ¼ teaspoon of black pepper
  • ½ teaspoon of smoked paprika
  • A pinch of salt
  • ½ cup of mayonnaise (You can also substitute with Greek yogurt or sour cream)
  • 2 teaspoons of chipotle peppers in adobo sauce 
  • Juice of ½ of a lime or 1 lime (to taste)
  • Chopped cilantro for topping (optional)
  • Cotija cheese for topping (optional) 

Instructions: 

  • Cut the corn into four equal parts. 
  • In a bowl, mix the olive oil and the spices together. Then brush this oil mixture over the corn wedges. 
  • To cook, air fry the corn wedges at 400 degrees Fahrenheit for five minutes on one side. Then flip the corn ribs over and air fry them for another four minutes. (You can also bake the corn ribs at 375 degrees Fahrenheit for about 25 minutes or until they’ve curled up and are slightly charred. 
  • To make the chipotle lime mayo, mix the mayo (or substitute with Greek yogurt or sour cream), lime juice, and the chipotle peppers in adobo sauce with a pinch of salt. 
  • When the corn is ready, drizzle the sauce on top of it. If you’d like, you can add cotija cheese and/or cilantro as a topping. Then enjoy!
