What you’ll need:
- 1kg Seedless Watermelon
- 100g crumbly feta cheese
- Seeds from 1/2 a pomegranate
- 8 cups baby spinach
- 2 small summer squash chopped
- 1/2 cup pepitas
- 12 fresh mint leaves, coarsely chopped
- Juice of 1 lemon
- 3 tbsp olive oil
- Salt and pepper to taste
How to make it:
In a large bowl combine the first 7 ingredients. Add lemon, olive oil and salt and pepper and toss gently to combine
