Watermelon, Squash & Pomegranate Salad

When you think of the refreshing combination of watermelon and pomegranate, naturally you think of summertime. Which is exactly why our CUT Energy Watermelon Pomegranate is such a delight for the tastebuds. But here’s a way to take that flavor combination to the next level and incorporate into your healthy meal plan. Add a few extras like spinach, squash and pepitas, and you’ve got a nutritional powerhouse!

What you’ll need:

  • 1kg Seedless Watermelon
  • 100g crumbly feta cheese
  • Seeds from 1/2 a pomegranate
  • 8 cups baby spinach
  • 2 small summer squash chopped
  • 1/2 cup pepitas
  • 12 fresh mint leaves, coarsely chopped
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • Salt and pepper to taste

How to make it:

In a large bowl combine the first 7 ingredients. Add lemon, olive oil and salt and pepper and toss gently to combine
